The rules, and where they come from
Every ingredient in a cake sits in one of two camps. Flour, eggs, milk solids, and cocoa build and dry the structure; sugar, fat, leavening, and liquid tenderize and moisten it. A formula is in balance when the two camps counter-weight each other, so the cake rises, sets, and stays risen. The classic pound cake is the reference point: equal weights of flour, butter, sugar, and egg, two structure-builders against two tenderizers, leavened by nothing but creaming.
From that baseline come the working rules for a creaming-method butter cake. Sugar stays at or below the flour weight. Eggs stay at or above the fat, so there is enough coagulating protein to set the structure around it. Liquid roughly balances the sugar and flour. And the one constraint with no number attached: sugar plus liquid must not exceed what the structure can carry, which is why the calculator reads the camps back to you rather than grading them.
Push sugar past the flour and you have a high-ratio cake, the ultra-moist, fine, sweet American layer cake. It only stands because of two mid-century developments. Emulsified shortening carries mono- and diglycerides that let the batter hold far more sugar syrup and fat in stable suspension, and chlorinated cake flour, whose acid-treated starch gelatinizes lower and absorbs more liquid, sets the crumb before the sugar-laden foam falls. The mixing method changes too: dry ingredients and soft fat to a sandy paste first, then the liquids in two stages, which coats the flour in fat and sharply limits gluten. Butter and all-purpose flour at high-ratio sugar loads is the formula that curdles in the bowl and sinks in the oven.
Foam cakes balance differently, to the weight of the eggs rather than the flour, because the egg foam is both the leavening and the structure. A genoise runs one part each of egg, sugar, and flour by weight; angel food is the fat-free extreme at roughly three parts white to three sugar to one flour.
