Frozen Dessert Balancer

Every sweetener carries two independent numbers: how sweet it is (POD) and how much it softens the freeze (PAC). Sucrose scores 100 on both. Dextrose is far less sweet and softens nearly twice as hard. Blend them and you can set sweetness and scoopability separately, which is the entire professional trick. Dairy rows count only their lactose (whole milk about 4.8%, heavy cream about 3%, skim milk powder about 52%). Fruit rows count their own sugars at the sugar share you enter. Everything else in the mix (fat, protein, water, stabiliser) contributes nothing to either number.

Why two numbers, and where the bands come from

Ice cream is scoopable because only some of its water is ever frozen. Dissolved sugars lower the freezing point, and the effect depends on how many molecules are dissolved rather than what they are, which is why a gram of dextrose, with roughly twice the molecules of a gram of sucrose, depresses the freezing point roughly twice as hard. PAC is that molecular count expressed relative to sucrose. POD is a separate scale, how sweet the same gram tastes, and the two are independent: dextrose is 75 on sweetness and 190 on anti-freeze, so replacing sucrose with it softens a mix while making it slightly less sweet. The target bands are working figures from the gelato and ice-cream formulation references, not laboratory constants. Sources differ by 10 to 20 points because they assume different serving temperatures, overruns, and fat levels, and because lactose from the dairy is sometimes counted and sometimes not. This tool counts it. Treat the band as the place to start and the freezer as the test: if a mix inside the band still scoops hard, move 20 g of sucrose to dextrose and re-freeze before changing anything else.

What this tool does not do

It does not model stabilisers, fat, protein, or overrun, all of which change how a frozen dessert eats without changing its freezing point. It does not carry a validated figure for glucose syrups above DE38, for fruit purées beyond a generic sugar share, or for salt, which the library does not cover as a frozen-dessert ingredient. Where a value is marked directional in the ingredient list, it is an estimate from molecular weight rather than a measured figure.
