Gelatin Bloom Converter
Gelatin is sold four ways and specified by one number, bloom strength. Sheets are engineered so that one sheet sets about the same amount of liquid whatever its grade; powder is not. This converts between them, then doses gelatin by percentage of the whole base so you can hit a texture on purpose. The chemistry is in Setting & Stabilizing Agents.

Bloom strength is a gel-strength test: the higher the number, the firmer the set per gram. Pastry sheets sidestep the arithmetic because each grade is cut to a weight that delivers about the same set per sheet, roughly 3.3 g for bronze, 2.5 g for silver, 2.0 g for gold, and 1.7 g for platinum. That is why sheet-to-sheet conversion is a count and not a calculation, and why the professional habit is to pick one grade, gold or platinum, and dose by weight.
Powder breaks the equivalence, because it is sold by weight at whatever bloom the maker chooses. Converting through bloom uses the square-root relationship in the bloom-conversion reference this library cites, and it is a working approximation rather than a law; treat any powder result as a starting point to test, not a figure to scale a production batch from.
The dose bands are percentages of the total mass of the mix, gold or platinum grade: 0.6 to 1.2 percent for a spoonable panna cotta, 1.5 to 2.5 for a bavarois or mousse that also carries whipped cream, 2.5 to 4 for a jelly or insert that has to slice clean, and 8 to 10 for gummy candy. They are professional-standard starting points, and where the set lands within a band depends on sugar, fat, and acid in the base.
What decides whether it sets
- Hydrate first. Sheets soak in cold water under 60 °F (15 °C) for five to ten minutes, then get wrung out. Powder is sprinkled over about five times its weight of cold water and left to stand.
- Dissolve warm, never boil. Melt it into a base at 122 to 140 °F (50 to 60 °C). Sustained heat above 176 °F (80 °C) breaks the protein down and weakens the set.
- Acid softens it. Below about pH 4 the set loosens; a sharp citrus or passion-fruit base wants the firm end of its band.
- Enzyme fruits defeat it. Fresh pineapple, kiwi, papaya, fig, and ginger carry protein-digesting enzymes that cut the collagen so it never sets. A brief boil of the fruit or juice deactivates them; canned pineapple is already safe.
- Alcohol has a ceiling. Past roughly 40 percent alcohol in the final mix, the protein drops out of solution.
- The freezer is the weak point. Ice crystals tear the network, so gelatin inserts are frozen for clean cutting and always served thawed.
- It is animal-derived. Off the table for vegetarian, vegan, halal, and kosher work unless you switch to fish or certified sources, or to agar, carrageenan, or gellan.
