Custards and creams
Curdled or broken baked custard
3 likely causes, sorted by where the problem lives. Work down the list and change one variable at a time.
Likely causes
- techniqueOvercooked: the proteins tightened and squeezed out their moisture.
- equipmentOven too hot.
- techniqueNo water bath.
What to change
- Bake in a bain-marie. The surroundings cannot exceed 212 °F (100 °C), which buffers the custard.
