Pâtisserie Doughs

Every finished pastry starts as one of a handful of doughs, and each dough is a different answer to one question: how much gluten do you build, and how do you set it. This is the grammar of the pâtisserie kitchen, dough family by dough family.

French pastry looks like a long list of unrelated recipes. It is a short list of doughs, each built by a different negotiation between fat, sugar, egg, and flour. The short crusts suppress gluten so they crumble. Puff and choux build almost none and lift on steam alone. The sponges leaven on whipped egg. The enriched doughs develop a strong gluten network first, then load it with butter. Learn the five families as systems, and every named pastry is a variation you can predict rather than memorize.

The short pastries

The short pastries are defined by shortness: fat coats the flour’s proteins and starch, interrupting gluten development so the baked crust fractures rather than stretches. The four canonical members, pâte brisée, pâte à foncer, pâte sablée, and pâte sucrée, differ less in what goes in than in how the fat, sugar, and egg are introduced. Two methods govern all of them, and the choice is the single largest lever on texture (Alterrative, 2023):

Sablage (the “sandy” method) rubs cold fat into the flour first, until the mixture looks like coarse cornmeal, and adds the liquid last. Because the fat coats the flour before any water arrives, the water hydrates almost no gluten. The result is maximum shortness and a melt-and-crumble bite, more forgiving of over-handling but more fragile to roll. Crémage (the “creamed” method) beats soft butter with sugar first, works in the egg, then adds flour last and only until it comes together. Here the fat meets flour after the flour has taken on moisture, so a little more gluten develops. The dough is smoother and more cohesive, rolls thin cleanly, and holds a crisp edge, the build for precise pâte sucrée tart shells (Pfeiffer, 2013).

Brisée: flaky versus mealy

Pâte brisée (“broken dough”) is the unsweetened tart and pie lining. Its close cousin pâte à foncer adds a little egg yolk for a sturdier shell (Milk & Honey, 2022). The professional benchmark is the 3-2-1 dough: three parts flour, two parts fat, one part water by weight (LibreTexts). The same ingredients give two textures depending on how far you cut the fat:

Flaky stops while the butter is still in pea- to hazelnut-size pieces. Those flat sheets melt in the oven, leave voids, and steam pries the layers apart in a miniature lamination. It is the choice for top crusts and where crispness matters. Mealy rubs the fat all the way to coarse cornmeal, fully coating the flour. It absorbs less water, suppresses more gluten, and, critically, is more waterproof. That fat barrier is exactly what a wet filling needs underneath it, so the mealy build is the correct floor for a custard, quiche, or fruit tart (CIA Foodies, 2021).

Everything about the method serves gluten control. Keep the butter cold, 39 to 45 °F (4 to 7 °C), so it stays solid and discrete rather than smearing. Add ice water in one pass and mix only until the dough coheres, since every extra turn hydrates more protein and toughens the crust. Some pastry chefs replace 15 to 25% of the water with vodka: ethanol hydrates gluten far less than water yet flashes off in the oven, buying tenderness without a dry, cracking dough (Half Batch Baking, 2023). Choose a low-protein flour, around 8 to 9% protein, to cap gluten potential from the start.

Then rest the dough, wrapped and refrigerated, for at least 30 minutes and preferably overnight. Resting hydrates the flour evenly, re-chills the fat, and relaxes the gluten so the rolled dough does not spring back or shrink. Roll to an even 2 to 3 mm from the center out, rotating a quarter-turn between passes, and chill the lined shell again before it bakes. Shrinkage, when it happens, is overworked and under-rested gluten contracting, cured by less water, more chilling, longer rest, and easing the dough into the ring instead of stretching it (King Arthur, 2023).

Blind baking, cuisson à blanc, sets an empty shell before a cold filling goes in. Dock the base so it does not dome, line it with parchment and weights pushed into the corners, and par-bake around 350 to 375 °F (180 to 190 °C) until the walls set, then finish uncovered to color the floor. Brushing the hot shell with beaten egg and returning it briefly cooks a thin varnish that seals the docking holes, waterproofing the crust against its filling (Figoni, 2010).

Sablée and sucrée: the sweet crusts

Pâte sablée (“sandy dough”) is the richest and most crumbly, close to shortbread. Pâte sucrée (“sugared dough”) is finer and firmer, the cuttable dessert-tart shell (A Baking Journey, 2021; Migoya, 2013). Sablée carries more butter and often yolks only, which is why it eats shorter and more fragile. Both come down to the sablage-versus-crémage choice above: sand the sucrée for maximum tenderness, cream it for a dough that rolls thin and holds a sharp edge, but keep any aeration modest, because too much whipped-in air makes the shell puff and slump.

The sweeteners and eggs pull their own way. Icing sugar dissolves fully for a fine, even crumb and browning; granulated leaves a coarser, sandier texture, and sugar tenderizes either way (McGee, 2004). Yolks add fat and emulsifying lecithin for richness and shortness; whites add water and protein that toughen and crack if overused. Replacing 15 to 30% of the flour with almond flour, the classic pâte sablée aux amandes, shortens the crumb further and adds flavor, since nut flour brings fat and no gluten at all (Migoya, 2013). Sweet doughs run warmer and stickier than brisée, so roll them between parchment, chill hard, and bake lower, 325 to 340 °F (160 to 170 °C), because the high sugar browns fast.

Puff pastry

Pâte feuilletée is an unleavened laminated dough: hundreds of alternating layers of lean dough (détrempe) and butter, built by repeated rolling and folding. There is no yeast, and all the lift is physical, from steam (Migoya, 2013; Roux, 2008). The lock-in butter equals about half the détrempe weight, giving a finished pastry roughly a quarter to a third butter, and it must be a dry, plastic 84% butterfat lamination butter that stays pliable cold without cracking (Pastry Arts, 2018).

The layer count follows directly from the folds. A single (letter) turn folds in thirds and triples the layers; a double (book) turn quadruples them. Starting from one butter layer, the classic build of six single turns reaches 3⁶, or 729 butter layers. The flaky sweet spot is roughly 700 to 1,500 layers. Below about 250 the leaves are thick and bready; above roughly 2,000 they weld together and the pastry loses its distinct flakiness (Pastry Arts, 2018).

The whole craft is a fight to hold the butter and dough at the same plasticity, cool enough that the butter stays a continuous sheet but not so cold it shatters into shards. Work on a cool bench, around 61 to 64 °F (16 to 18 °C), with the butter near 55 °F (13 °C), and rest the dough 20 to 30 minutes refrigerated between turns to relax the gluten and re-firm the butter. Bake hot, 375 to 425 °F (190 to 220 °C), to flash the steam before the butter renders out, and egg-wash only the top, never the cut sides, which would glue the layers shut. The blitz or rough-puff shortcut cuts cold butter chunks straight into the flour and takes three or four turns: the layers are random and fewer, the rise shorter, but it is fast and excellent for palmiers and tart borders (King Arthur, 2020).

Puff is worth distinguishing from viennoiserie lamination, which it resembles only on the bench. Puff is unleavened, hundreds of thin layers lifting on pure steam into something crisp and shattering. Croissant and Danish laminate a yeasted, enriched dough with far fewer turns, typically three singles to 27 layers, so fermentation and steam work together and the result is bread-like and tender rather than shatter-crisp (Kitchen Projects, 2021).

Choux

Pâte à choux (“cabbage paste”) is a twice-cooked paste leavened almost entirely by steam. The flour is pre-gelatinized on the stovetop, then the finished paste is cooked again in the oven (Serious Eats, 2023). A robust ratio runs liquid 100, butter 50, flour 50 to 60, and eggs 80 to 100 by weight, about four eggs per 125 g of flour. Use bread flour or a strong all-purpose, because choux needs enough protein for its starch-and-gluten matrix to hold a large volume of egg and build walls strong enough to trap steam.

The method has two decisive steps. First the panade: bring the liquid and butter to a full rolling boil, add all the flour at once, and stir over the heat for two to three minutes. The starch gelatinizes and the paste dries until it pulls cleanly from the pan and films the base, reaching about 167 to 176 °F (75 to 80 °C). This desiccation drives off water so the paste can absorb more egg; under-dry it and the walls are weak, over-dry it and the fat separates and the paste turns greasy and will not puff (Mombrite, 2021). Second, cool the panade to about 140 °F (60 °C) and beat in the eggs one at a time. The eggs supply the water for steam, the protein for structure, and lecithin to emulsify. Stop by feel: the paste should be glossy and fall from the paddle in a slow ribbon or “V.” Too little egg gives stiff, cracked, under-risen shells; too much gives a slack paste that spreads (Serious Eats, 2023). Reserve the last egg and add it gradually.

In the oven the abundant water flashes to steam and inflates the paste while the gluten and gelatinized starch set into rigid walls and the egg proteins coagulate, leaving a large hollow shell (The Fresh Loaf, 2020). Water in the recipe gives a crisper, higher shell for éclairs and Paris-Brest; milk adds sugar and fat for richer flavor and deeper browning at a slightly lower rise, and many kitchens split the difference 50/50. Stage the bake hot then moderate: start at 400 to 425 °F (200 to 220 °C) for the steam burst, then drop to 350 °F (175 to 180 °C) to dry and set, and do not open the door during the rise, since cool air condenses the internal steam and collapses an under-set shell. A thin craquelin disc of butter-sugar-flour laid on each bun before baking crackles into a crisp, even dome and regulates the rise (Migoya, 2013).

The sponge family

These are foam-leavened batters: air whipped into egg expands as steam and trapped gas while egg and flour proteins and gelatinizing starch set the structure. Success here comes down to folding and fat handling, because fat destabilizes an egg foam (Callebaut; Figoni, 2010).

Génoise is the whole-egg reference. Eggs and sugar are warmed over a bain-marie to about 109 to 113 °F (43 to 45 °C), whipped to a thick ribbon, then folded with sifted flour and, optionally, melted butter added last. Génoise is lean and dry by design, built to be soaked with flavored syrup, and it collapses from over-folding, an under-baked center, or too much hot butter (Friberg, 2002). Biscuit whips the yolks and whites separately and folds them together, giving a lighter, drier, more resilient sponge that forgives more. Its piped form, biscuit à la cuillère (ladyfinger), is dusted twice with icing sugar for a crisp crackled crust and lines charlottes and tiramisù. Biscuit joconde, an almond sponge lightened with meringue, bakes thin, flexible, and close-grained, the lining sponge for entremets and the opéra (Migoya, 2013).

Where the meringue is the structure, the family turns to the nut-meringue sponges. Dacquoise folds ground almonds or hazelnuts into a stiff French meringue and bakes low and slow, 300 to 340 °F (150 to 170 °C), into a crisp-edged, chewy-tender disc with no whole-egg foam at all. Financier is a batter cake defined by beurre noisette, browned butter, and almond flour, bound by egg whites only for a moist crumb under a crisp caramelized shell. And two hybrids round out the family: chiffon marries an egg foam to an oil-enriched batter with a little baking powder, so the crumb stays permanently moist, while angel food is whites only, no fat, leavened purely by a stabilized meringue. Across all of them the rules are the same. Fold flour in additions and stop the instant the streaks vanish. Add any melted butter or oil last and gently, and remember that lean sponges are meant to be soaked after baking while the richer batters carry their own moisture.

Enriched and viennoiserie bases

The enriched doughs invert the short-pastry logic. Instead of hiding the flour from water, they build a strong gluten network first and then load it with butter. Brioche is graded entirely by that butter, as a fraction of the flour weight: pauvre at a lean 30 to 40%, riche at the classic 50 to 60%, and mousseline pushing 70 to 100% and beyond (Roux, 2008; Kitchen Projects, 2021).

Because the eggs and butter coat gluten and slow its development, order matters: the dough is kneaded to a strong window-pane network before the butter goes in, and then cold, softened butter is beaten in gradually. Keep it cool, around 75 to 79 °F (24 to 26 °C), and give it a long cold retard, which deepens flavor and turns a sticky dough into a shapeable one. The croissant and Danish base is a leaner enriched dough developed only partially, since over-developed gluten fights lamination, then laminated with about 25 to 30% butter over three single turns and proofed warm enough to keep the butter soft but not melting, near 79 °F (26 °C).

One more trick belongs here. A water roux, tangzhong or yudane, cooks a small fraction of the flour with liquid until the starch gelatinizes. That cooked starch holds far more water, so hydration can climb without slackening the dough, giving a fluffier crumb that stays soft for days because the retained moisture slows staling (King Arthur, 2018; The Perfect Loaf, 2023).

The technique underneath all of them

A few disciplines cut across every family. Rest relaxes stretched gluten so dough stops springing back: short pastries for 30 minutes to overnight, laminated doughs between turns, while choux and sponge batters are used at once before the foam or leavening spends. Temperature is a specific target per dough, not a guess: short-pastry fat cold and solid, lamination dough and butter matched in plasticity, brioche cool, the choux panade cooled before the eggs, and the génoise foam warmed to whip. Egg washes are a finish you tune: whole egg for a balanced gold, yolk with cream for the deep viennoiserie mahogany, white alone for a pale glassy crust that grips seeds, always brushed thin and never on a laminated cut edge. And every formula is worth writing in baker’s percentage so it scales linearly: fix a flour weight, multiply through, and the ratios, and therefore the texture, hold at any batch size.
