What to change

  • Blind bake the shell before filling.
  • Bake on a preheated stone or steel, or on the bottom rack.
  • Use a metal pan. Glass and ceramic conduct poorly and bake the base slowly.
  • Brush the shell with egg white to seal it.
  • Thicken the filling.
